The Au Cheval Cheeseburger is one of my all-time most requested copycats. I decided to go with the Double Cheeseburger, "Au Cheval Style," which is three patties, two slices of cheese, thick-cut bacon, minced red onion, very thin sliced dill pickles, and dijonnaise, on fresh-baked brioche buns. Au Cheval also makes a "single" which is two beef patties and one slice of cheese.

How to cook a Tomahawk Ribeye (Cowboy Steak) on the Blackstone Griddle. In this video I cook up a 3 pound USDA Prime Grade Tomahawk Ribeye Steak on the Blackstone Griddle. For this cook I used the "continuous flip method." I ran my Blackstone Griddle on high and used beef tallow as the fat component, flipping every 30 seconds until the steak reached 120ºF. The crust that the Blackstone Griddle developed was amazing!

I smoked this beautiful wagyu tri-tip on my newly purchased BGE MiniMax (over hickory) until the interior temperature reached 120ºF / 37.8ºC. While I rested the tri-tip, I opened up the dampers and cranked up the heat on the Big Green Egg. I finished this roast off by searing it one minute per side, developing a nice crust.
