Portobello mushroom Pizza!  Delicious Clean eating!   After you clean the mushroom caps, bake them in the oven at 400 degrees for 10 minutes. Then remove from oven and apply pizza sauce and toppings. Bake for another 10 minutes or until cheese is melted and browning. (If you use more mozzarella.) Paleo, Gluten Free, Vegetarian, Low-carb, Low-Cal and Low-Fat!    AND Super easy to make!

Tomato as a bun - genius!  This recipe says to use meat, but this could easily be done with walnut/lentil meatball recipe.  Drizzle with a great cashew aioli and skewer it...  perfect appetizer or small plate meal.

Tomato Avocado Burger : Low carb and gluten-free. I did this for a get together~ they were delicious. Next time I will us big cherry tomatoes and make itsy bitsy burgers. I did some of each size but the smaller ones were easier to eat.
