Peanut Brittle - this is the best, easiest recipe for peanut brittle. Delicious! I have now made several batches and have had success every time. I like to add 30 seconds to 1 minute to the 2nd stage of cooking to caramelize the sugar even more. But watch out, the line between dark brown and burnt is a matter of seconds. Microwaves vary greatly. I've made it with mixed nuts (watch cashews carefully as they tend to burn easily) too.
