This is one of our favourite places in Vanuatu,  Port Olry.

These lovely ladies from from the island of EPI in Vanuatu.   They were in New Zealand during the fruit picking season, under an agreement between our two countries.   They have woven these wonderful baskets out of industrial waste and created useful items.   We are selling these baskets at our regular market days in NELSON New Zealand.   ALL the proceeds are returned to the original weavers.   Come and see our site at the Nelson Market each Saturday - LAV KOKONAS, under the bright pink…

Lemon Balls  - original recipe was  by A Teaspoon of Honey.     1 1/2 cups shredded coconut + 1/2 cup for coating  1 cup ground almonds  (I used toasted Sunflower Seeds instead)  4 tbsp Lav Kokonas Virgin Coconut Oil  4 tbsp Mountain Valley Kamahi Honey (a beautiful lemon coloured honey)  zest of one lemon  juice of one lemon    Mix all together in food processor / blender. Roll into balls, and coat in coconut. Put into fridge for at least 30mins before sampling

Frangipani - the tree looks so sad, mostly bare of all leaves, and then these delightful flowers are produced, with the most heady scent.    Isn't nature incredible?
