Homemade Stevia Syrup 3 c. purified water 3 c. stevia leaves Place chopped leaves in a glass jar. Add 1 cup of water. Cover tightly. Steep 24 hours. Taste for sweetness. If you'd like it sweeter, rest another 12 hours, BUT NO LONGER. Strain the liquid into a pan, discarding leaves. Add remaining 2 cups of water. Simmer on low heat for 20 minutes. Cool. DO NOT over-steep leaves. This will create bitter aftertaste. Properly prepared stevia syrup should be sweet, but have no aftertaste.
