Tuesday Tastings :: Grilled Corn Salsa
roasted corn salsa - add avocado and lime zest
Sweet Mango & Lime Corn Salsa ~ ⅓C fresh diced Mango; ⅓C fresh diced Red Pepper; 1C Canned Corn; Juice of ½ Lime - a scant 2T; 2T Agave; 1t ground Ginger; S to taste Optional: ¼t Chili Powder and/or Cayenne; Optional Add-In’s: Black Beans, Red Onion, Garlic, other diced veggies. Combine all ingredients. Can be served immediately but is better as flavors meld. Store leftovers in frig for up to 5 days.
