Today I made some yummy and filling pancakes. After looking in the fridge and finding some browned ground turkey I h.

Apple Pie Pancakes, add lots of cinnamon to the basic pancake recipe in our book (page 223). Top the cooked pancakes with even more cinnamon, 0% Greek yogurt and a swirl of sugar free, maple syrup (if you are not a purist). Yum! Chop up 1/4 of an apple and made a scrupmtious, chunky apple sauce. Almost feels like eating apple pie for breakfast!

1/2 c whey protein powder , 1/4 tsp nutmeg, 2 tsp baking powder, 1/8 tsp salt, 2 Tbsp heavy cream, 1 egg, 2 Tbsp water, 1/4 cup Truvia, Coconut Oil 1. Mix dry ingredients. Mix egg & wet ingredients, add to dry ingredients. 2. Fill a pan,with about 1½ in of oil, heat to 350. Fry batter like pancake.  3.Cool on a cake rack sitting in a sheet pan. 4. Sprinkle sweetener and cinnamon mixture over both sides of the doughnuts. Makes 2 funnel cakes, 6 net carbs each.
