Garlic Spaghetti Squash, Spinach, and Bacon, + melted Parmesan cheese and toasted pine nuts. Really good, I added the garlic (naturally.) and turkey bacon. Don't be afraid of salting/seasoning heavily - the spaghetti squash has NO flavor.
Got a chopped challenge from my nephew Rikki, which being a jerk gave me frozen peas, sausage, eggs, rice flour and mushrooms so I made a Pea Rue, was fun, but took me 40 minutes instead of 30 so I'm chopped :) turned out great though :)
