Kale, Mushroom, Feta, and Mozzarella Breakfast Casserole - made this for breakfast this morning and it was pretty good and very easy. And it got my toddler to eat kale for breakfast so I think I'll definitely make it again!
Spicy Dragon Noodles - My Notes: very yummy and very easy. I halved the Sriracha and red pepper flakes to keep the heat down. I also like a little more sauce so I doubled it for this recipe. Added a grated carrot and purple cabbage strips
Gorgeously colourful and nutrient dense Power Kale Salad. Crunchy vegetables drizzled with a peanut dijon dressing and topped with salty peanuts! And peanuts are technically vegetables too of course, SO DOUBLE WIN.
