Seriously Seasoned Rice--This is a chicken recipe, but when I made it I just skipped the chicken. It came out pretty well, but I needed more liquid than the recipe called for to make the rice not crunchy. I used the rice for fajitas;
Carrot Rice - fragrant basmati rice sauteed with carrots, onions, fresh ginger, peanuts, and cilantro. I used brown basmati rice and also used both peanuts and cashews. I also skipped the cilantro. Fragrant and a nice change from plain rice.
