Roasted Vegetable Mac 'n Cheese FULL of veggies, Use GF pasta (or even sp. sqsh) olive oil for the cheese base, used almond milk, mild cheddar and Colby organic cheeses. Don't forget to add mushrooms next time! Comfort food, slightly healthier!
Tortellini Chili: Tried it and it was delicious. I used turkey for the meat base - yum! I think you could use the meat base for lower fat burritos or tacos - it's that tasty. My family really enjoyed this meal.
