MOCK TUNA SPREAD 1 15 ounce can garbanzo beans, drained and rinsed 1 stalk celery, finely chopped ¼ cup finely chopped onion ¼ cup finely chopped green onions 1 tablespoon lemon juice ¼ cup Mayo (http://blog.fatfreevegan.com/2012/04/tofu-cashew-mayonnaise.html) Place the beans in food processor, process until coarsely chopped. Don’t let them get to a smooth consistency. Place in bowl, add remaining ingredients. Mix well. Add more Tofu Mayo if you want a creamier spread. Chill 1 hour.
