So green! Another aubergine curry from Nigel Slater. Serves 4 Blitz 3 lemon grass, 6 lime leaves, garlic, 25g coriander, 3 tomatoes, 2 chillies and 3cm ginger to rough paste. Cut 3 aubergines in half lengthways then cut into thin slices. Fry till pale gold. Add paste and cook for 1-2 mins. Simmer gently 15-20 min with 800ml coconut milk, 2tsp nam pla, 1tsp sesame oil and 1tbsp soy. Add salt and lime juice.
